Taste Atlas chose the 100 best Pastries in the World: Four Bosnian Dishes are on the List

The world encyclopedia of traditional dishes, Taste Atlas, presented a list of the best-rated pastries in the world, and the list included four Bosnian “representatives” – zeljanica, burek, sirnica and krompirusa.

Taste Atlas combines authentic recipes, food critic reviews and research articles on popular ingredients and dishes, and the list of the world’s best pastries was created on the same principle.

It is interesting that on the mentioned list there were as many as four dishes from Bosnia and Herzegovina (BiH), i.e. four variations of one dish. Zeljanica, burek, sirnica and krompriusawere among the 100 best pastries.

The best position of the above was achieved by zeljanica, who took the 13th position on the list.

“This savory Bosnian pie consists of thinly rolled dough that is filled with a combination of blanched spinach, fresh cow’s cheese, cream and eggs. The dough is rolled into thin sheets called ‘jufke‘, which are sprinkled with filling and shaped into a ring. When baked, the pie is occasionally topped with warm milk or a combination of oil and water. Zeljanica is best served freshly baked, with the addition of sour cream or yogurt,” says Taste Atlas.

For burek, which is in the 18th position, Taste Atlas states that despite its Turkish origin, it has evolved into a “proud gem of Bosnian national cuisine”.

“Although most locals claim that only burek with ground beef can be called burek, the same dish appears with other fillings, and these other varieties are known by different names. The dish is extremely popular throughout the Balkans, although in BiH,the cultural importance of this everyday food is incomparable and is best summed up in numerous local proverbs that say that if a woman knows how to make a good burek, she has the right to marry,” the mentioned website states.

Sirnica took 31st place with a rating of 4.5, while krompirusa was rated 4.4 and took 52nd place, Klix.ba reports.
